To be perfectly clear here: Gluten intolerance, most commonly caused by Celiac’s Disease, is a problem. Almost two percent of all Americans have it, that’s eight million Americans at this point. Less than nut allergies, more than seafood, a huge number that every chef, cook, maker of foods, inviter of partiers, and seller of edibles, needs to keep in mind. Eight million Americans is a massive, massive, demographic. But it’s not a $11B demographic, which is what the industry essentially created, using clever marketing tools and the linking of carbohydrates to gluten.
